Loomi or Black Limes
Loomi, Loomi Omani, dried limes is an Middle Eastern spice, popular in Persian and Iranian cuisine. To make loomi, ripe limes are boiled in salt water then sun-dried until the flesh turns dark in color. The resulting spice is often used to flavor dishes with a citrus aroma and a sour tang.
It’s used in everything from chicken and fish dishes, to soups and slow simmering rice and meat recipes. For example, one or two pierced black limes in a stew give it a certain degree of spiciness. Make a few holes to allow the cooking juices to infuse with the tasty inside. Black limes may also be added with pepper to sprinkle on chicken and fish before grilling.
Dried limes are available in whole or powdered form.
